Starting with 100% 2 row base malt, our manufacturer uses a minimum amount of heat and a slower evaporation to reduce carmelization. The extract is mashed around 152 degrees which gives good fermentability and great malt flavor. The light flavor allows the hops to shine through. We package massive amounts of this malt extract weekly. We also use a special metallic, oxygen
